Zucchini Bread

Use that leftover zucchini for some zucchini bread to end the summer!



Servings: 2 Loaves


Ingredients

  • 3 eggs, slightly beaten

  • 2 cups sugar

  • 1 cup vegetable oil

  • 2 tsp vanilla

  • 2 cups grated zucchini

  • 3 cups flour

  • 2 Tbsp cocoa powder

  • 1 tsp cinnamon

  • 1 tsp baking soda

  • 1 tsp salt

  • 1/2 tsp baking powder

  • 1 cup chopped pecans (optional)



Directions

  1. Preheat oven to 325 F

  2. Beat eggs, sugar, oil and vanilla in a bowl

  3. Add grated zucchini and mix well

  4. Sift in dry ingredients, stir until moist

  5. Fold in chopped pecans

  6. Spoon into greased and floured pans and bake for 50 minutes

  7. Enjoy!
