Use that leftover zucchini for some zucchini bread to end the summer!

Servings: 2 Loaves
Ingredients
3 eggs, slightly beaten
2 cups sugar
1 cup vegetable oil
2 tsp vanilla
2 cups grated zucchini
3 cups flour
2 Tbsp cocoa powder
1 tsp cinnamon
1 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 cup chopped pecans (optional)
Directions
Preheat oven to 325 F
Beat eggs, sugar, oil and vanilla in a bowl
Add grated zucchini and mix well
Sift in dry ingredients, stir until moist
Fold in chopped pecans
Spoon into greased and floured pans and bake for 50 minutes
